Chocolate Brownies

Serves: 8
Cooked: at oven temp 375F/190C
Cooking time: 30 minutes
Preparation time:10 minutes

100g butter
200g sugar
50g cocoa powder
50g self-raising flour (farine a gateau)
good pinch of salt
2 eggs, beaten
100g cream cheese (full fat)
50g plain chocolate, chopped into small
chunks
icing sugar for dusting

  1. Line a roasting tray with baking parchment.
  2.  Put the butter, sugar and cocoa into a saucepan and melt together. Take off the heat and add the flour, salt,
    eggs and cream cheese. Beat together well.
  3. Add in the chocolate chunks and immediately turn into the tin and bake for 30 minutes or until the brownies
    are risen and cracked on the top.They need to be underdone and squidgy to end up chewy as they will firm
    up.
  4. Cool in the tin, remove and cut into squares. Store in a sealed container for up to 4 days.
    Dust with icing sugar and stack on a plate.
