A day at The Mountain Cookery School

Nothing beats starting the day with a cup of tea sat on the balcony of the Mountain Cookery School listening to the squeaks of the marmottes playing on the hill side and watching the sun rise over the mountains and light up the Lavachet wall.

We usually start the morning session with a brief for the day and chat about what we’re going to cook, it doesn’t take long for the chalet to be filled with the homely smells of sizzling bacon or freshly prepared pancakes! We all can’t wait to sit down together to tuck in to a hearty breakfast and talk about the techniques we used and how to deal with any potential kitchen mis-haps!

After a speedy clean up we get started on preparing our lunch and a 3 course evening meal – plus any extras! Our introduction to baking is always popular – trying out the traditional English afternoon tea of freshly baked scones. Whether it’s a more traditional recipe our students choose or experimenting with different flavours, we’ve tasted it all this season at the school, with one of our favourite combinations being chocolate and lime!

Each day we cover a variety of crucial kitchen techniques and go through tutor demonstrations such as understanding recipes, chopping, marinating, baking and giving you the essential tips on cooking at altitude. Although it sounds busy we always make sure the kettle is on!

Spending the afternoon getting involved with what Tignes has to offer is always a highlight of the week… from hiking up the the Aiguille Percee and watching the resident Golden Eagles soar over the mountains, to kayaking and back flipping off a giant slide which plunges you in to Tignes Le Lac there is something for everyone here in the mountains.

After an adrenalin fuelled afternoon it’s time to pop the aprons and get back in the kitchen putting the finishing touches to the evening meal and getting creative with canapés. Our favourite part of the day is sitting down together and enjoying the evening meal, discussing how it was created and what we are going to cook tomorrow!
