Double Chocolate Cookies

Makes: 12 big or appox 30 regular   |   Preparation time: 10 minutes
Cooked: at oven temp 350F/180C   |   Cooking time:  10-15 minutes


300g plain flour
60g cocoa, sifted
2 teaspoon bicarbonate of soda
1 teaspoon salt
250g butter, softened
250g sugar
1 teaspoon vanilla extract
2 eggs
200g white chocolate, chopped

  1. Break the dark chocolate into pieces and place into a heatproof bowl set over a pan of barely simmering
    water. Heat, stirring occasionally, until melted.
  2. Place the flour, cocoa, bicarbonate of soda and salt into a large bowl and mix well.
  3. In another bowl, using a wooden spoon or electric mixer, cream the butter and sugar together until light and
    fluffy. Add the melted chocolate and stir well.
  4. Add the vanilla and egg, then mix in the dry ingredients. Finally stir in the white chocolate chips.
  5. Put 12 balls of mixture onto a baking sheet that has been lined with baking parchment. flatten slightly (not
    completely and keep them at least 2cm apart) and bake for 18 minutes..
  6. Leave the cookies to cool on the baking sheet for 4-5 minutes, then transfer them to a cooling rack to
    harden as they cool.
